Crock Pot Root Vegetable StewThis Root Vegetable Stew is delicious and so easy to make. It also uses many budget friendly pantry items, and vegetables that last a long time, making it the perfect recipe for shopping on a budget. This recipe would taste great with any root vegetables, so feel free to swap out any you don't like!
Makes: 6 Servings Ingredients 1 ½ cups low sodium vegetable broth, or chicken broth 1 large potato, peeled* and cubed 1 large sweet potato, peeled* and cubed 1 medium onion, chopped 2 parsnips, peeled* and chopped 2 carrots, peeled* and chopped 1 can (15oz) low sodium diced tomatoes with juices ½ tsp dried thyme ¼ tsp ground pepper Optional Ingredients: 1 tsp homemade All Purpose Seasoning Instructions
*Note: Peeling your root vegetables decreases fiber. If you want to keep the peel on just make sure you scrub your veggies before adding them to the pot. |
